What do I eat in a day? I’m asked this question all the time, and the answer is that most days I eat very simply (often just potatoes and vegetables, or rice and beans), but I also do some prepping ahead and batch cooking so that I can have a little extra variety from day to day.
Here’s a quick look at an average day in my kitchen.
Breakfast
My preference on most mornings is for savory rather than sweet, so I usually start the day with green vegetables, like roasted brussels sprouts, or sautéed power greens with shallots. On mornings when I’m shorter on time, I might just warm leftover mashed potatoes and add it over a toasted Ezekiel muffin with a little hummus and mustard. But when I have a little more time, I like something like:

Lunch
Lunch is usually either warmed up soup from the night before, or a large fresh salad like this: Simple Salad with BBQ Tempeh and Beet Caesar Dressing:

Snack
I don't snack every day, but when I do, it’s generally a banana, or might be… Blueberry Peach Overnight Oats:
Or Fresh Plum and Nectarine Oatmeal Muffins:
Dinner
Dinner is usually our largest meal of the day, and always includes something very satisfying, like Hearty Lentil Soup with Butternut Squash and Red Cabbage, maybe served with steamed quinoa:

Or Grand Slam Tempeh Burgers with Spinach and Sweet Potatoes, along with a green salad and corn on the cob:
Or Holiday Lentil Bolognese, served with roasted asparagus and a green salad:
Dessert
Dessert (most nights) is simply whatever is our freshest fruit – often cherries, blueberries, or/and grapes in the summer, and usually an apple, a pear, or an orange in the wintertime.
On some evenings, we might also add in a special treat, like homemade Very Vanilla Ice Cream (sweetened only with dates):

And that’s it! After dinner, we finish our kitchen clean-up, and try to avoid eating for at least 3 hours before bedtime. By then, I’m already thinking about (and looking forward to) whatever might be on the menu for the next day. : )
